Farming: It begins at the plantations with excellent fertilization, every day hand-labor and biological pest controls. We monitor aflatoxins in the field, heavy metals and nutrients in our soils. The water used to clean and wash the macadamia kernel is potable spring water from the high mountains of the Andes. Production process: Macadamia in-shell is cracked, selected, washed, salted, dried and selected again for a 2-step quality inspection process to ensure the best quality nuts. Differentiation: Our products are not roasted, they are dehydrated, plus nuts are fully washed and separated into high and low oil macadamia nuts. Only high oil macadamia nuts are exported. With our innovative salting process the macadamia looks and feels natural and leaves no traces in your hands of oil nor salt. Its flavour is a pleasant salty taste different from conventional sea-salt roasted macadamia nuts because is not roasted and doesn't have salt all over the bag. Characteristic: High oil content macadamias are chrunchier, sweeter and last longer. Its appearance is light beige instead of dark brown. They are not rancid and the oxidation process takes longer avoiding unwanted smells or flavours inside the bag. Not all farmers or manufacturers take into account this factor that affects taste and customer experience.
